Greek Yogurt w/Caramelized Figs & Pistachios
As I was surfing the web (bringing that phrase back) for simple fig recipes to use the figs I caramelized, nothing really struck my fancy. Then, Emily Ho from The Kitchn came in the clutch, and gave me exactly what I was looking for- AND I had all the ingredients on hand so I couldn't go back now.
This is totally like a dessert for breakfast- it feels so indulgent with all of the wonderfully rich flavors, but it's all awesome ingredients. You can skimp on the EVOO and flakey sea salt if you wish to keep it a bit less decadent, but I highly suggest keeping them. Yum.
While you can certainly use other yogurts besides Greek Yogurt, I highly suggest it as a low-sugar, high-protein addition to this otherwise natural sugars (nonetheless, sugars)/good fat dominant dish. Its tart flavor also helps offset the sweetness perfectly.
Greek Yogurt w/Caramelized Figs & Pistachios

Ingredients
~1/2 dozen Caramelized Honey-Rosemary Figs
1 cup Nonfat Greek Yogurt
~ 1 dozen roasted/shelled Pistachios
Dab of EVOO
Sprinkle of flaky Sea Salt
Recipe
1. Spoon yogurt into bowl, and top with figs and pistachios.
2. Very lightly drizzle EVOO on top, sprinkle with sea salt, and serve! Don't eat the bowl.
