For those of you who have been following my blog for awhile, know my feelings on the gluten taboo and how I generally think it's unnecessary to avoid it unless you have celiacs-- but I certainly can attest to the fact that gluten can really exacerbate certain stomach issues and autoimmune issues, having experienced it myself.
But as I explain in this article, those unpleasant side effects can be alleviated by using heirloom wheat like Einkorn. Disclaimer, I am not saying this is a magical food- people with celiac should still not eat this as it does contain gluten, but it is a known fact that einkorn has been agreeable for many whose bodies find modern wheat intolerable.
Here are some of my favorite recipes below that Einkorn flour is even tastier in than regular flour:
