Strawberry Recipe Roundup

Truth be told, I've been rather unimaginative in the kitchen. And I'm not giving myself a hard time about it.

I've been challenging myself to cook all my meals (except social occasions) at home, and I've been doing really well! The catch is, is that I've been so busy lately that I am sticking to the basics and pretty much eating the same foods everyday. There have been lots of eggs, avocado, berries, greens, and chicken in the fridge.

Right now, this is what is working for me in terms of ease, health, and happiness. So, I'm choosing to not berate myself over the fact that I don't have a slew of new recipes lined up in the queue for the blog at the moment. I feel a cooking spree coming around the corner though, so I know there will be new stuff up on here very soon!

In the meantime, I have been buying luscious strawberries like a madwoman for the past two weeks, because a mini wave of strawberry season is upon us. Whole Foods has been cranking them out with amazing sales (for NYC, hehe), much to my delight. So, I've decided to do a little roundup of my 9 favorite recipes you can make with an abundance of strawberries, incase you don't snack on them all before they go bad!

1. Strawberry-Rhubarb Chia Jam

2. Strawberry Chia Jam Crisp
[Vegan/GF]

3. Strawberry Arugula Salad w/Fig-Balsamic Vinaigrette

4. Oat Breakfast Bars w/Strawberry Chia Jam

Then, 3 more from my some of my favorite foodie blogger ladies:

Ricotta Cocoa Waffles w/Strawberries
by Asha of Food Fashion Party

My girl Asha threw raspberries on these gorgeous waffles, but I think I might chop up some fresh strawberries to top these for my next weekend brunch treat!

White Chocolate and Summer Berry Cake
by Joscelyn of Wife Mama Foodie

Joscelyn knows exactly what my stomach dreams of. I've always been a sucker for berries in yellow butter cake, and she makes the most picturesque ones.

Strawberry Shortcake
by Deb of Dr. Debs Pots

While I want to bake a whole cake for myself, Deb's small-batch recipe for 4 shortcakes are the perfect excuse for a sweet treat.
